A staple in Lebanese cuisine. Bulgur is the result of cracking wheat kernels into different sizes. This coarse size is cooked just like rice. It is a far more wholesome and tasty alternative to the imported rice.
Suggestions: Our favorite coarse bulgur dish is called "berghol be banadoura" (bulgur with tomatoes), where the bulgur is cooked over low heat in a tomato-based sauce. Many Lebanese families also replace rice with cooked coarse bulgur. It is prepared by frying it in olive oil with thin vermicelli, then covering it with water (or broth) with a pinch of salt. Once liquid is boiling, leave covered on very low fire for 20 mins.
